By handling everything in-house—from variety and seedling development to cultivation—we ensure the delivery of safe, high-quality products.

Developing New Varieties and Strains of Wasabi

Committed to superior ingredients, KINJIRUSHI strives to develop ideal wasabi varieties with excellent aroma, spiciness, and disease resistance. Leveraging our unique experience, we have developed a variety of new strains, including Mitsuki, suited to field cultivation, and Izu Kogane, renowned for its vibrant color and aroma when grated.

KINJIRUSHI's Exclusive Premium Strain, Hakuho™

Horseradish is used as a raw ingredient in processed products such as powdered wasabi and grated wasabi. At KINJIRUSHI, we developed our exclusive premium strain, Hakuho™, which enhances the fresh aroma and spiciness when blended with wasabi. Characterized by its crisp spiciness, it is an essential raw material for KINJIRUSHI's processed wasabi products.

Seedling Cultivation Technology:
Meristem Culture Technology

Utilizing the meristem, found at the tip of plant stems and roots, allows for the production of disease-free seedlings. However, since it is tiny and located deep within the bud, each one is carefully removed by hand and cultivated in test tubes.

By leveraging meristem culture technology, we produce and supply high-quality wasabi and horseradish seedlings to contract farmers across Japan. We provide 250,000 seedlings annually. Cultivating with our superior seedlings ensures raw material quality and improves harvest yields.
